Refinishing Kitchen Cabinets

I am in the process of stripping my kitchen cabints. They are made of a solid pine. They are currently just polyurethaned and have become sticky and yellowed with cooking and age. My intentions is to stain them fruitwood. The advice I need is in the final coat. Will I need to seal them to prevent water marks and spills marking the cabinets. I don't want a gloss finish but something soft. Any suggestions??
