The dremel 1" dia saw was handy to get some cuts going, but using a prybar and tugging the ceiling down in sections is the way to go. Scribing the joint with a utility knife where the wall meets the ceiling is important. I laid down a tarp, and am putting pieces into contractor trash bags.

The electronic mouse trap definitely works! Get one if you have a mouse problem and don't want to use D-Con.
