Yes you can reverse them, but that will leave you with hinge recesses to fill. I have done it by using scraps of thin wood glued in place. After the glue sets up, plane or file down so the patch is flat.
But the hard part is filling the large holes for the knob. You can also plug them with scraps of wood. Fill around the patches with Durham's Water Putty.
It is tempting to just swing them around, but if you do that, the edge bevel will be backwards and the door won't close well.
