Beams Or T&G.......

Good question. Am I correct in assuming the ceiling is standard vaulted construction with dimension lumber?
I guess if it were me, I would put up the T&G first. That way, you could avoid all the cutting to size to fit the T&G between the beams. Then the beams could be put up (assuming that you will have a method of attaching them to the structure) A 6x6 air dried spruce beam weighs 7 pounds per foot in length. A 6x8 air dried spruce beam weighs 9.4 pounds per foot in length.
Either way you decide to go, you will probably have to put some type of molding at the joint between the beams and T&G. (The beams won't be perfectly straight) This could be a 1/2x1 rough sawn piece or whatever.

PS - Make sure you have vapor barrier between the T&G and insulation, and that the cavity the insulation is in is vented.
