Drywall Help

We have a house that is over a 100 years old. In one room there was water damage from a leaking roof. We just had a new roof put on and have torn all the plaster off the wall and ceiling where the damage was. I have left the lath (still in good shape) and want to drywall the room. Can I drywall over remaining plaster and what prep work do I do to the lath before covering with drywall? The lath wall is an exterior wall. Do I need to put plastic up first?
