You could drywall over wood lath ok; just make sure you have all the plaster off so there won't be any lumps. You will need to screw into the studs, so the screw must be longer. Where 1-1/4" are ok for 1/2" drywall on studs, you would need 1-5/8" for drywall over wood lath.
