If the doors open and close OK without binding, I would just relocate the strike plate. Remove the plate and plug the screw holes with whittled bits of wood. Usually you are going to have to move the strike plate less than 1/4" up or down. Locate the center of the striker on the jamb and hold the strike plate over this point (eyeballing will be accurate enough. Draw the outline of the strike plate in its new location then with a utility knife, scribe this outline. complete the mortise with a razor sharp chisel and re-mount the strike plate. You should be good to go!
