You drill holes about 1/2" deep and set anchors in epoxy. I won't do it anymore it gives me a case of the nerves. Drill too far and/or it cracks and OH S***! All of the ones I've done they have cut out the hole in the granite and polished the edges. I have the granite guys set the anchors based on the sink I drop off or that they have measurements for.
