capping old pipes

I just bought a house, and one of the old bedrooms, was at one time used as a kitchen, there are still pipes coming out of the wall for the old sink, 2 copper water, and one waste. I will be re drywalling the wall, but I need advice on how to Close off the old pies behind the wall? No sure if they can be cut and closed somehow? They havent been in use for many many years.
