Yes, it is common to do window extensions. The last home I built had 2x6 walls with 1" styrofoam on the outside. I had to make extensions that were about 2.5 to 3 inches deep for all my windows.
Today, many of the manufacturers will provide extensions of the proper depth if ordered that way.
I would rip lengths of wood the same type as the windows are made of. Instead of trying to line the extensions up exactly with the existing extension, I would offset it slightly (1/8 to 1/4 inch) to give the joint some character. After the trim is installed, it will have a nice finished look.
