While that tells us it is one of the Kenmore range models built by GE, it does not however help us to know exactly which model you have. They're not 'all the same'... even when made by the same manufacturer.
What is needed to identify the appliance in question is its full model number as written on the appliance's model and serial number tag. You can find tips for locating that identification tag on your appliances in the 'Repair Parts' section of my site linked below.

Finally, I decided to turn off the clock/timer display all together by following the intructions in the manual - "press the clock pad once". Sounds like there was likely a problem in the electronic control previous to your actions and it may have just got to the point of total failure. On electronically controlled appliances, all oven functions are part and parcel of the timer unit (whether you can see the time of day display or not).
