Hydronic heating is an excellent source of heat--you're lucky to have it.
The noise is due to the expansion and contraction of the copper pipes sliding in their brackets. One way to reduce the noise is to rub some graphite on the supports inside the baseboards. This will allow the pipes to glide rather than jerk as they move.
