I guess you have tried dishsoap which should emulsify the fats in butter. They do sell cleaners to remove oil and grease from brick, concrete etc, but it sounds like you will have many problems with staining if a common item like butter on a counter top will stain. Counter tops are meant to take alot of kitchen style abuse.
