Installing mortise lockset on new door

Hi-
Recently moved into a 115 year old house. Original interior doors without traditional doorknobs-- only latches. Plan to replace some doors and refinish others, but would love to install the old-fashioned mortise lock glass doorknobs. I have heard this is a bit difficult. Would love any advice on how to tackle this job.
