Water Swelling.....

I suspect what you are seeing are the edges of the 4x8 foot subfloor sheets. I suspect they are made of OSB board and were installed too tightly together At some point during construction they were exposed to a lot of rain. The rain water caused the edges to swell up, and once that happened, the swelling will not go down even after they are dried out.
Were the ridges always there?
At this point, the only repair I can think of would be to have the carpet pulled up and the seams (edges) of the sheets sanded flush.
This would be realatively easy for the carpeted rooms, but for the inlaid rooms would mean replacement of the inlaid.
