Drywall over plaster???

I have a 1916 era home and I am placing drywall over the exicting plaster. My question is should I use 1/4 or 3/8 drywall? Also my inside exterior walls seem to be concrete or block all the way to the second floor. How do I drywall over this? Is there a trick? Do I fir strip it out or put the drywall directly over it? Any input would be greatly appretiated.
