Based on the age of the house, it is likely what you have under the existing plaster is structural brick. This will make it very difficult to install drywall over the existing plaster, because you won't have anything to fasten the drywall to. In your case having the existing plaster repaired or recoated may be the better option. Furring won't work well because of the brick and framing in front of the existing walls can create problems with space. Look into having the existing plaster repaired. jmho
