Kenmore Fridge freezing in fridge compartment - Model 106.70832100

I bought my house about 8 months ago and it came with a Kenmore Fridge, Model 106.70832100. It has worked well until yesterday when we noticed that food on all shelves of the fridge were freezing solid. I have tried to adjust the temperature using the control at the top of the fridge section, but it is still freezing. I have cleaned the coils at the bottom of the unit and have even cleaned it out, turned it off and let it sit overnight thinking the damper might have frozen in place. When we turned it back on this morning, same thing - a glass of water we put on the top shelf froze solid. I am thinking this is due to a faulty thermostat - any other thoughts?

I feel confident that I can replace the thermostat myself, but don't want to waste the time or money if I can't be sure that is what is causing the issue. Any other tests I could do?
