The thermostat (see the following link) should control the temperature. If it isn't, it may be defective and need to be replaced.

That would usually only cause it to be too warm and/or run longer than normal, not be too cold.

I do not see any kind of mechanical damper used on your model. It looks to be a pretty simple refrigerator design.

They are not usually difficult to replace.

What "tests" have you done??

The thermostat could be tested to see if its contacts are opening when it got cold but it is difficult to determine what temperature it is actually sensing and also to find out what on/off temperature specifications the control has to begin with. A thermostat is usually just assumed to be defective upon deduction.

The parts supplier I linked to above has a very lenient return policy and will even accept for return electrical parts which most appliance parts suppliers won't. At least you wouldn't be stuck with the thermostat if it wasn't the cause (although I can't think of anything else that could be).
