Gas Hot Water Heater - plumbing question

I'm going to change the hot water shut off valve under my kitchen sink, so besides turning off the cold supply to the GAS hw heater, do I also need to turn off the burner/gas as well? I work on electric ones all the time as part of my job, and if I'm just changing a hot valve under the sink I generally don't turn off the hw circuit breaker since very little water is drawn from the tank. I just don't know about gas. Thanks to any answers.
