Instead of shutting off the valve to the WH I would turn off the main water valve to the house.

The reason is that some one might try turning the water on at a different place. And if they have both hot and cold open at the same time you can get back feed from the cold through the hot water piping.

Treat the gas water heater as you would an electric.

If something happens that it take a lot time or the you have to drain lots of water then put it on the Vacation setting.
