Without knowing the type of metal roof anf manufacturer and whether or not they manufacture a ridge vent as well as fascia or soffit vents for the product, it isn't possible to say.
Most metal roof companies make ridge vents and soffit or fascia vents for their products, however, so your first stop is to enquire with the manufacturer.
As far as the insulation level goes, your state or local energy code will also dictate the level of insulation for 3 season or sunrooms.
In most cases, a single layer of foam over a roof deck will be of little or no benefit, and in most cases, you would need at least 5 inches to meet minimum energy code.
