regrouting shower tile

I have a tiled shower/tub combination. the bottom layer of tile(that meets the tub) was taken out and put back when a new tub was installed ten yrs ago. The grout in this area has separated a bit from the tile and there are some beginnings of mold. I want to remove/replace the grout in this area and perhaps the entire wall. what is the process? I don't think ther is any leaking yet.
