sagging floor

Hello,

My wife and I recently purchased a twin home built on the 1920's. We are remodeling the kitchen. The issue is that there is a slope due to the fact that the kitchen was an addition apparently before codes were invented. The kitchen runs 14 ft to the back of the house. all of the joists up to about the 10 ft mark are connected to the sill. the last 3 joists are just sitting on brick while there are three piers holding up the wall in this span. There is a bedroom and bath above this room. I have had 3 quotes. All seem reasonable but were all different in approach. The two we are debating are 1) rip up the floor and level the three beams using concrete footings 2) use a wetbed to level the floor without touching the beams. We like the option of having the joists level. Will footings do the job or should I ask the contractor to do more and will we have an issue with the upstairs even if the joists were never connected to a sill in the first place (piers holding up the final 3-4 feet of wall)
