Proper drywall thickness to use on ceiling

What's the best drywall to use for a new ceiling? Joists are 16" OC. Will 3/8" sag over time, or will 5/8" (because it's heavier). Obviously, the thinner the better (easier to work with and cheaper), but I want it to last.
