Unlevel Bath Floor

We are remodeling our 2nd floor bathroom and the floors are not level, both from front to back AND side to side.

We currently have temporary shims that my husband built under both the sink and the toilet to level them out.

Since we are redoing everything, we are at a loss as to how to handle this. We are adding hardwood floors to the bath and attached hallway. If we level out the bath and hallway, then there will be uneven dropoffs (uneven from side to side) into both attached bedrooms.

If we leave the floor as is, then we have to add shims to the toilet and sink again. At this time you can see the shims, but if we leave it this way, we need to hide the shims.

Leveling out the floors would be great, but will create followthrough problems throughout the rest of the 2nd floor.

We are on a budget and I've had to make do with other issues in this old 1900 board-on-board house.
