You spent all that time telling us why it wasn't the mortar now I'll explain why it was.

Pre-mixed isn't thinset. It's only mastic with sand and color added to it. It's complete garbage no matter who makes it.
The weather problem will add to your issues. Most materials specify a tempature range you have to stay in.
What is your joist structure like? What type and thickness of plywood subfloor do you have?

They have an excellent "Liberry" here that will answer lots of questions. And good installers will gladly answer any questions you might have. You can also see if your floor is strong enough for tile or stone by using the "Deflecto".
