As long as you are not allowing the water heater to drain, you should be OK. However, it should be no big deal to turn off the water heater briefly for peace of mind. If electric, just remove the fuse or flip the breaker. If gas, just turn the control to the 'pilot' position. This will keep the pilot lighted but not allow the heat to come on.
