Rockwool isn't particularly dangerous. It's basically spun

slag from blast furnaces. Wear a mask, wear long sleaves and jeans, shower after installing. Don't eat lunch up in the attic. Rockwool can be cut with a standard carpet/utility knife, but the blade will get dull pretty quickly. I'd cut it to fit between the joists for a neater installation. Rockwool is generally gray or salt and pepper colored instead of pink or white like fiberglass insulation.

Two inches won't give you much insulation value, but it's free so use it. I'd lay fiberglass insulation over it if possible, at least enough to fill the bay between the joists.

Don't cover it with drywall, that's too brittle to stand on. Use plywood or 1 X 12 boards to make a walkway if you want to.
