Hello there. Crown molding can be tricky no matter what the walls are like. In your situation you still have joists or rafters underneath the ceiling that you could nail to with a long enough finish nail. A good trick is to get yourself some nice long 2x4's and rip them on a table saw with the appropriate angle to match the back side of the crown molding. (often around 35 degrees. You can nail the 2x4 along the perimeter to the cieling. i would also use some glue between the 2x4 and plaster as well. Then when your ready to put up the crown moling you will have a nice flat surface to nail to. Hope this helps.
