Unlike contractors who say you should use 1/2 sheets / boards for your wainscoating. (I think they just want to increase profits). I did demolition work in the 1950's and it was explained to me when we were tearing down a school in Pa. that the wainscoating was topped with "chair rail".. It's called "chair rail" for a reason.. 32" is the proper height if your topping it with molding which assimilates "chair rail".. You will notice that most standard size kitchen type chairs will rub the rail and not the wall or the wainscoating.. Hope this helps..
