Going to thinner tile but need it elevated to original height.

I recently had to replace a sewage drain line in my house, about 35 ft of it, starting in my newly remodeled kitchen. The tile had already been discontinued.
I had to bust up my

1" Travertine tile
appx 1" Terrazzo
appx 6 inches of concrete.

To avoid having to rip out the newly installed cabinets and granite countertops we opted to cut a border of the original tile about 4" wide away from all cabinets and leave it intact. leaving a 1" depression in outer areas and a 2" depression where I had to take up the Terrazzo.

The sewage line has been replaced, sand filled, concrete poured to original height. Still a huge depression where the terrazzo used to be.

THe original tile was about 1" thick but we will be getting a ceramic or porcelain tile to replace it (which will be much thinner)

Here are my 3 following questions:

1. There is still thin-set left on some of the Terrazzo where the old tile was. Is it necessary to remove all the thin-set?

2. What should I use to place the tile? Thinset? (the thinset will be about 1.5" thick)

3. Should I pour more concrete? maybe another 1" of concrete to bring it back up to the level the terrazzo was originally at or maybe 1.5" to bring it closer to the level I would be able to lay thinset at?
