The naturally occurring tannins in oak ( and other woods ) react to chemicals . I love the look of a simple oil finish too but its not very moisture resistant . It sounds like some chemical(s) in the soil leached out and stained the table .You may have some success with sanding but they make bleaches for wood that might work better.
