hinged opening on home bar

Hello,
My friend has a bar in her basement with a crawl-through opening to get behind the bar. I want to cut a section of the bar above the opening and put a hinge on it for easier access. The wood on the bar has several coats of finish on it. Please tell me 1: What type of saw and saw blade do I use to cut bar? 2. Should the top of the hinge go above bar or be lower?
