I would sister all of them the full 2x8. I would just nail them with a nail gun using 10 or 12 penny nails. You could get them all started on one end and then put a beam under the other ends that are hanging down, and then jack them up to meet the saggers (or maybe 4 at a time). Make sure to "crown" the new joists so that any curve is up.
