I would like to present to your two choices.
1) stop where you are and skim coat the floor that you have worked to and float it out. seems that this is pretty stable.

2) You have removed three layers of vino, being about 1/4 of an inch collectively. Why don't you lay down and fasten a new plywood flooring where you are.
