Anna, You should talk to the poeple who built the coutertops to see what they think about changing the edge banding. The probably have a good idea about how they were put together and so will have a good idea about changing it. By the way, I don't know why you are going to bother. The cherry will not be that much different in color anyway.
The granite is a bad idea. You may as well have new countertops made for the granite if you want to go that way.
