My kitchen was just installed with granite countertops, they suggested soapy wateronly and reseal it every year. the most 'dangerous' staining things are oils. they said to try to avoid leaving any oil on the granite for extended periods of time. Also, you know you need a new coat of sealer when water does not bead on it any more.
