How do I reclaim a badly stucco-finished ceiling?

My wife and I are contemplating buying a house where
the current owner used stucco to texture the ceiling in
several rooms. The stucco is VERY rough with somewhat deep (1/4 to 1/2
inch) peaks and valleys, resulting in an awful cave-
like stalagtite effect. If we decide to buy, we'd like to reclaim the ceiling.
How would we do it?
