If you are set on this idea, I would consider screwing a 1/4 inch piece of ply board onto the top of the table making sure that the screws penetrate the laminate and go into the actual top itself.
This would give you a stable substrate and would not release. then you could get some "bull nose" tile to finish off the sides.
