Most mold problems come from water sources inside the house. But what you describe leads me to believe that such is not the case.
The location of the problem, between the truss and the top of the plastic suggests that you are getting condensation of moisture from outside air which is then pulled under the truss by capillary action. If the problem is worse near eave vents that would tend to confirm this theory.
If so, to fix the problem you will have to either remove the plastic where the problem reoccurs or prevent humid air from getting near the plastic from the top.
