Is it possible to grab the protruding screw with a pair of vice grips or pliers and turn it out by hand? If so, that would be my first try. I have also had luck taking a cutting wheel and cutting a new slot in the head deeper than the original and then removing it with a screw gun.
All of this assumes that you are talking about the head being stripped.
