are they 4x8 sheets of ply, or actual 1x6's or what?
Depending on the severety of the peaks, you could rent a drum sander and knock of the high spots, the low spots if not severe can be floated in with a floor levelor. If the boards are 1 x's then you might only have cupping of the boards and they should be replaced.
