How do I seal subflooring...

I'll be moving to an older home soon and, due to allergies need to remove all the floor coverings and seal the the subfloors before I can move my children in. What products do you recommend to seal the subfloors? Stain? Paint? Other suggestions?

Please bear with me as I am fairly new to the DIY world, but I am eager and excited about learning.
