Removing insets from very old kitchen cupboards...

I have recently bought my grandmother's house that was built in the early 1900s. The kitchen has old painted kitchen cupboards with full front doors. In the process of stripping them I have discovered that the center insets are not wood but some type of cardboard and I would like to remove that and install glass.
