Well, I have two to suggest

Polyurethane Oil based. this one will work fine, but the major downside is that it will definately give the pine a very yellowish cast. Experiment with it on a scrap and see what you think

Then Water Based Polyurethane, this is relatively new, will NOT Yellow and you can add multiple coats with in a days time.

Both are rated for floors.
