Wooden Kitchen Countertops

We are currently remodeling our kitchen with stainless steel appliances and white cabinets. We like the look of wood countertops (to warm things up) but are worried about the functionality. Can wood countertops get wet? Are they easily stained or warped? Do they absorb grease from cooking? Are there ways (i.e. treatments, brands) to prevent this? Can you recommend the best kind of wood for a countertop? Should wooden laminate be considered instead and, if so, will this look inferior or fake? I would appreciate any suggestions you could give me. Thank you very much.
