the setting on your boiler to around 95-110, depending on the make of laminate.
Your boiler was set at 125 because of the insulating qualities of the carpet.
If you went with tile instead of laminate, you could lower it to around 85-90. Tile radiates and conducts better than laminate, and you would have less heat loss downward through your slab.
