The subfloor should be flat to about 1/4" per 10 feet. Also, since this is reclycled floor what kind of shape are the tongues and grooves in? Make sure you are using the proper tools to fasten it down, either an angle cleat nailer or a stapler, both available at rental centers. Post more info, it would be of great assitance.
