wood tub surround

I'm installing a bath tub and want to put a wood tub surround rather than acrylic/fiberglass. I was thinking of either hemlock T&G or cedar T&G. What would be better. Also what should I finish the wood with and should I prep the back of it with something. Any other tips would be helpful.
